Experience the bounty of summer with a New Recipe
We are entering a great time of year for fresh summer produce. This crisp organic summer salad is great alone or as a compliment to a meal. The best part is it travels well if you are headed out for a picnic.
2 Tbsp. rice wine vinegar
3 Tbsp. olive oil
1 1/2 tsp. Dijon mustard
1 tsp. honey
2 Tbsp. fresh chopped herbs
4 cups fresh greens
2 cups fresh corn (3 ears)
1/2 cup red onion, thinly sliced or 1/2 cup radish, thinly sliced
1 cup cherry tomatoes, halved
1/2 cup cucumber, seeded and sliced
To make the vinaigrette, whisk together all ingredients until smooth. Season to taste with salt and pepper.
To make the salad, combine the fresh greens, corn, onion or radish, tomatoes, and cucumber in a large bowl. Toss with the vinaigrette and serve immediately.
This salad is one of my favorite go-to recipes in the summer. Being able to taste and enjoy fresh, nutritious food is a gift that we all deserve to receive.
